  • The Protein Base: 1 can (15 oz) chickpeas (rinsed, drained, and thoroughly dried) and 1/2 cup cooked quinoa.

  • The Chickpea Spices: 1 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp cumin, 1/2 tsp garlic powder, salt, and black pepper.

  • The Greens & Veggies: 2 cups fresh kale or spinach, 1/2 cup roasted sweet potato cubes, 1/2 cup sliced cucumbers, and 1/4 cup shredded carrots.

  • The Healthy Fats: 1/4 cup sliced avocado.

  • The Power Dressing: 3 tbsp raw tahini, 1 tbsp maple syrup, 1 tbsp fresh lemon juice, 1 tsp Dijon mustard, a pinch of salt, and 2-3 tbsp warm water to thin.

How to Make It

The secret to perfectly crispy chickpeas is ensuring they are as dry as possible before adding the oil and spices. Don't rush the drying step!

1.Roast the chickpeas:Crucial for maximum crunch.

Preheat your oven to 400°F (200°C). Spread the drained and thoroughly dried chickpeas on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with the smoked paprika, cumin, garlic powder, salt, and pepper. Toss to coat evenly. Roast for 20–25 minutes, shaking the pan halfway through, until crispy and golden.

2.Prepare the base:

If using kale, remove the tough stems and chop the leaves. Place them in your serving bowl, add a squeeze of lemon juice, and gently massage the leaves with your hands for 1 minute until they soften and turn vibrant green. Add the cooked quinoa to the bowl.

3.Whisk the dressing:Build the flavor.

In a small jar or bowl, combine the tahini, maple syrup, lemon juice, Dijon mustard, and salt. Whisk vigorously. It will thicken at first, so gradually add warm water 1 tablespoon at a time until it reaches a smooth, pourable consistency.

4.Assemble the bowl:

Arrange the roasted sweet potatoes, cucumbers, carrots, and avocado over the greens and quinoa. Top with a generous mound of the crispy roasted chickpeas. Drizzle heavily with the tahini dressing just before serving.

Serving Suggestions

Buddha bowls are the undisputed champions of meal prep. You can roast the chickpeas and sweet potatoes, cook the quinoa, and mix the dressing up to 4 days in advance. Store all the components in separate airtight containers in the fridge. When you are ready for lunch or dinner, simply build your bowl and enjoy it warm or cold!
