How to Make It

The secret to a truly crispy cauliflower wing is a two-step baking process: first to set the batter, and second to caramelize the hot sauce.

1 Prep the batter
Set up your station

Preheat your oven to 450°F (230°C). Line a large baking sheet with parchment paper and lightly grease it with a quick spray of cooking oil to prevent sticking. In a large bowl, whisk together the plant-based milk, flour, garlic powder, onion powder, smoked paprika, salt, and pepper until you have a smooth batter (it should be the consistency of pancake batter).

2 Coat and bake

3 Sauce them up

While the cauliflower is baking, whisk together the buffalo sauce and melted vegan butter in a large, clean bowl. Remove the baked cauliflower from the oven and carefully toss the hot florets in the buffalo sauce mixture until thoroughly coated.
