Keto Ground Beef Stuffed Peppers (No Rice)

By completely eliminating the rice and binding the savory ground beef mixture together with a rich, sugar-free tomato sauce and melted cheese, you create a keto-friendly powerhouse meal. These peppers are dense, incredibly filling, and packed with high-quality protein and fats. 


Why Ditch the Rice?

Rice acts as a cheap filler in traditional recipes, but it offers very little nutritional value compared to the macronutrient density of beef and cheese. Removing it transforms a carb-heavy dinner into an optimal keto meal.

The Ingredient Lineup

To keep the filling moist and structurally sound without rice, you need a good binding agent. A combination of tomato paste and melted cheese does the trick perfectly.

  • The Vessels: 4 large bell peppers (any color), cut in half from top to bottom, with seeds and membranes removed.

  • The Meat: 1 lb ground beef (80/20 is great for flavor, but 85/15 works well too).

  • The Aromatics: 1/2 cup diced yellow onion and 2 cloves minced garlic.

  • The Sauce: 1/2 cup sugar-free marinara sauce and 1 tbsp tomato paste (for concentrated umami).

  • The Cheese: 1.5 cups shredded cheddar or Monterey Jack cheese (divided use).

How to Make It

Pre-baking the peppers before stuffing them is the secret to avoiding a watery filling or undercooked, crunchy vegetables.

1.Pre-bake the vessels:Crucial for tender peppers.

Preheat your oven to 400°F (200°C). Place the hollowed-out bell pepper halves cut-side up in a 9x13 inch baking dish. Drizzle lightly with olive oil and sprinkle with a pinch of salt. Bake empty for 15 minutes to soften them up and release excess moisture.

2.Brown the beef:

While the peppers are baking, heat a large skillet over medium-high heat. Add the ground beef and diced onion. Cook for 6–8 minutes, breaking the meat apart until browned and the onions are soft. Drain any excess grease.

3.Build the filling:

Reduce the heat to medium-low. Add the minced garlic, Italian seasoning, garlic powder, salt, and pepper to the skillet, cooking for 1 minute until fragrant. Stir in the tomato paste, sugar-free marinara, and (if using) the riced cauliflower. Let it simmer for 3 minutes until the liquid reduces and thickens. Remove from heat and stir in 1/2 cup of the shredded cheese to bind it all together.

4.Stuff and bake:Melt and serve.

Remove the peppers from the oven (carefully pour out any water that pooled inside them). Generously spoon the beef mixture into each pepper half, packing it down lightly. Top evenly with the remaining shredded cheese. Return to the oven and bake for 10–12 minutes until the cheese is melted, bubbly, and slightly golden.

Serving Suggestions

These stuffed peppers are a complete, satisfying meal on their own, offering a fantastic balance of vegetables, protein, and fat. To elevate the dish, garnish them heavily with fresh chopped parsley or a dollop of full-fat sour cream.
