Keto Chile Relleno Soup

 Easy Keto Chile Relleno Soup

Classic chile rellenos are a beloved Mexican dish, featuring roasted poblano peppers stuffed with gooey cheese, coated in a fluffy egg batter, and deep-fried. Turning these complex, multi-step flavors into a comforting, creamy soup gives you all the bold, smoky taste of the original dish without the hassle of stuffing and frying—and most importantly, without the flour-based batter that easily kicks you out of ketosis.

By building a rich broth with cream cheese, heavy cream, and lots of roasted green chiles, you capture the essence of a chile relleno in a deeply satisfying, macro-friendly bowl.

Why Turn it into Soup?

Traditional chile rellenos are a labor of love that require roasting, peeling, stuffing, battering, and frying. A soup eliminates almost all the active prep time while transforming the dish into a complete, incredibly satiating meal.

The Ingredient Lineup

To get that authentic, smoky flavor, taking the time to use real poblano peppers is highly recommended, though canned green chiles work great in a pinch.

  • The Peppers: 4 large poblano peppers (roasted, peeled, and diced) or 2 cans (4 oz each) of diced green chiles for a quick shortcut.

  • The Protein (Optional but recommended): 2 cups shredded cooked chicken breast or rotisserie chicken to make it a standalone meal.

  • The Base: 4 cups chicken bone broth (for maximum nutrients and flavor).

  • The Creaminess: 8 oz full-fat cream cheese (softened) and 1/2 cup heavy whipping cream.

  • The Cheese: 1.5 cups shredded Monterey Jack or pepper jack cheese (shredded fresh from the block for the best melt).

  • The Aromatics: 1/2 cup diced white onion and 3 cloves minced garlic.

  • The Seasoning: 1 tbsp olive oil or butter, 1 tsp ground cumin, 1 tsp dried oregano, salt, and black pepper.

How to Make It

The secret to a perfectly smooth keto soup is ensuring your cream cheese is completely softened before adding it to the broth, which prevents it from clumping.

1.Sauté the veggies:Build the aromatic base.

Heat the olive oil or butter in a large Dutch oven or heavy-bottomed soup pot over medium heat. Add the diced onion and sauté for 4–5 minutes until translucent and soft. Add the minced garlic and cook for 1 more minute until fragrant.

2.Add the peppers and spices:

Stir in your diced roasted poblano peppers (or canned green chiles), cumin, and oregano. Toss everything together and let it cook for 2 minutes so the spices can bloom and release their oils.

3.Simmer the broth:

Pour the chicken bone broth into the pot and stir in the shredded chicken (if using). Bring the soup to a gentle simmer, then reduce the heat to medium-low. Let it simmer gently for 10 minutes to allow the flavors to meld together.

4.Make it creamy:Crucial for a silky texture.

Reduce the heat to low. In small additions, whisk the softened cream cheese and heavy whipping cream into the hot broth until it is entirely melted and the soup is smooth. Finally, stir in the shredded Monterey Jack cheese until melted. Do not let the soup boil once the dairy is added, as this can cause it to separate or curdle.

Serving Suggestions

Serve this velvety soup piping hot in large bowls. To replicate the textures of a plated chile relleno, garnish heavily! A dollop of full-fat sour cream, some extra shredded pepper jack cheese, a handful of fresh chopped cilantro, and a few slices of fresh jalapeño take this dish over the top. If you have some keto-friendly tortillas on hand, fry them up in a skillet to make crunchy, low-carb tortilla strips for dipping.
