How to Make It

Turkey has a lower fat content than beef, so the secret to juicy meatballs is handling the meat as little as possible. Over-mixing will make them dense and tough.

1.Form the meatballs:Don't overmix.

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large mixing bowl, gently combine the ground turkey, almond flour, egg, Parmesan, minced garlic, parsley, Italian seasoning, salt, and pepper. Use your hands to mix just until the ingredients are incorporated, then roll the mixture into 1-inch meatballs.

2.Bake to perfection:

Place the meatballs evenly on the prepared baking sheet. Bake for 15–18 minutes until they are golden brown on the outside and cooked through (reaching an internal temperature of 165°F).

3.Warm the sauce:

While the meatballs are in their final few minutes of baking, pour your sugar-free marinara sauce into a large skillet over medium-low heat. Let it gently simmer so the flavors concentrate and the sauce is bubbling.

4.Toss and serve:Crucial for texture.

Remove the skillet from the heat entirely. Add the raw, spiralized zucchini noodles directly into the hot marinara sauce, gently tossing them with tongs for just 1 to 2 minutes. The residual heat of the sauce will perfectly soften the zoodles without causing them to release excess water and turn mushy. Top with the baked turkey meatballs.

Serving Suggestions

Serve your zoodle bowls immediately with a light dusting of extra Parmesan cheese and a sprinkle of red pepper flakes if you like a little heat. Because zucchini noodles release moisture as they sit, this dish is best enjoyed fresh.
