To keep things flavorful and crunchy, you'll need a balance of protein, aromatics, and acidity:

  • Chicken: 2 cups cooked, shredded chicken breast (a store-bought rotisserie chicken saves a ton of time).

  • The Base: 1 cup low-fat (2%) cottage cheese.

  • Crunch: 1/2 cup diced celery and 1/4 cup finely diced red onion.

  • Acidity & Flavor: 1 tbsp Dijon mustard, 1 tbsp fresh lemon juice, 1/2 tsp garlic powder, plus salt and black pepper to taste.

  • Optional Mix-ins: Fresh dill, sliced grapes, or slivered almonds.

How to Make It

The key to this recipe is eliminating the texture of the cottage cheese before mixing.

1.Blend the base:Do not skip this step.

Add the cottage cheese to a food processor, blender, or use an immersion blender. Blend for 30–60 seconds until it is completely smooth and looks like thick sour cream or mayonnaise.

2.Mix the dressing:

Transfer the smooth cottage cheese to a large mixing bowl. Whisk in the Dijon mustard, lemon juice, garlic powder, salt, and pepper.

3.Combine the salad:

Fold the shredded chicken, diced celery, red onion, and any optional mix-ins into the dressing. Stir until everything is evenly coated.

4.Chill and serve:Flavor development.

While you can eat it immediately, covering the bowl and letting it chill in the fridge for 30–60 minutes allows the flavors to meld together perfectly.
