Clean Keto Broccoli Beef Stir Fry

Beef and broccoli is one of the most popular takeout dishes in the world, but restaurant versions are notoriously problematic for a clean or low-carb diet. They are typically drenched in thick, sticky sauces that rely heavily on cornstarch and brown sugar, and the meat is often cooked in highly processed, inflammatory seed oils.By preparing a "clean keto" version at home, you can completely sidestep the sugar and refined carbohydrates. Using a rich blend of coconut aminos, fresh aromatics, and a keto-friendly thickener, you can recreate that deeply savory, glossy sauce and perfectly tender beef without sabotaging your macronutrient goals.

Why Make the Swap?

The secret to a great stir fry is a sauce that perfectly coats the back of a spoon. Traditional recipes achieve this with massive amounts of cornstarch and sugar. This clean recipe uses xanthan gum to mimic that velvety texture while maintaining a virtually zero-carb profile.

The Ingredient Lineup

To ensure your beef is melt-in-your-mouth tender, choose a high-quality cut and slice it as thinly as possible against the grain.

  • The Meat: 1 lb flank steak or sirloin steak (sliced very thinly against the grain).

  • The Veggie: 3 cups fresh broccoli florets.

  • The Clean Fat: 2 tbsp avocado oil (a neutral, heart-healthy fat with a very high smoke point, perfect for wok cooking).

  • The Sauce: 1/3 cup coconut aminos (a soy-free alternative), 1 tbsp rice vinegar (or apple cider vinegar), 1 tbsp toasted sesame oil, and 1 tbsp keto-friendly brown sugar substitute.

  • The Aromatics: 3 cloves garlic (minced) and 1 tbsp fresh ginger (grated).

  • The Keto Thickener: 1/4 tsp xanthan gum (this is incredibly potent; do not use more or the sauce will become gummy).

How to Make It

Stir-frying happens incredibly fast, so it is vital to have all your ingredients chopped, measured, and sitting right next to the stove before you turn on the heat.

1 Mix the clean sauce
Crucial for a glossy texture

In a small bowl, whisk together the coconut aminos, rice vinegar, sesame oil, keto brown sugar substitute, minced garlic, and grated ginger. Very slowly sprinkle the xanthan gum over the top while whisking vigorously to ensure it doesn't clump. Set the sauce aside.

2 Steam the broccoli

Add about 1/4 cup of water to a large wok or skillet over medium heat. Add the broccoli florets, cover with a lid, and let them steam for 3–4 minutes until they are bright green and crisp-tender. Remove the broccoli from the pan and wipe the pan dry.

3  Sear the beef
High heat is mandatory

Place the dry wok back on the stove and turn the heat up to medium-high. Add the avocado oil. Once the oil is shimmering and hot, add the thinly sliced beef in a single layer. Let it sit undisturbed for 1–2 minutes to develop a dark, caramelized sear, then toss and cook for 1 more minute.

4 Glaze and serve

Return the steamed broccoli to the wok with the beef. Pour the prepared sauce over everything. Toss continuously for 1 to 2 minutes as the sauce rapidly bubbles, thickens, and completely coats the meat and vegetables in a glossy glaze. Remove from heat immediately.

Serving Suggestions

This clean keto stir fry is best served piping hot directly out of the wok. To soak up all of that rich, savory sauce while keeping the meal strictly low-carb, serve the beef and broccoli over a generous bed of warm cauliflower rice. For an extra crunch and a pop of flavor, garnish the dish with a sprinkle of toasted sesame seeds and a dash of red pepper flakes before digging in.
