How to Make It

1 Mix the herb coating
Prepare the flavor paste

Preheat your oven to 400°F (200°C). Line a rimmed baking sheet or a glass baking dish with parchment paper. In a small bowl, whisk together the olive oil, minced garlic, fresh parsley, fresh dill, fresh thyme, and the juice of half a lemon.

2 Prep the fish

Pat the cod fillets completely dry with a paper towel. This is essential—if the fish is wet, it will steam instead of roast, and the herb mixture will slide right off. Season both sides of the fillets generously with sea salt and black pepper, then place them in the prepared baking dish.

3 Coat and garnish

Spoon the garlic-herb mixture evenly over the top of each cod fillet, using the back of the spoon to spread it into a thin crust. Place a slice or two of fresh lemon directly on top of each fillet.

Bake in the preheated oven for 12–15 minutes, depending on the thickness of your fillets. You will know the fish is perfectly cooked when it turns completely opaque white and flakes apart easily when tested with a fork in the thickest part. Remove from the oven and serve immediately.
